Raspberry Mousse

 This is super simple and quick to make and great if you feel like a last-minute dessert.
I've used collagen to have added protein for this dessert and I have also used Deetos Ever Pure fibre, this will help thicken up this dessert and make it extra moussey, and have the added benefit of fibre because fibre is important for healthy digestion.
 
You could ferment your berries to get some probiotic goodness in this dessert.
And you can also use different sweeteners that suit you, I would suggest you make your sweeteners nice and fine before adding them into your dessert otherwise your dessert can be grainy.

ingredients:

  • 600 g frozen raspberries
  • 2 avocados, halved and flesh scooped out
  • 2 tablespoons of collagen
  • 2 teaspoons lemon juice
  • ½ teaspoon finely grated lemon zest
  • 1 Tablespoon Deetos ever pure fibre
  • 3 tablespoons finely ground monk fruit sweetener or xylitol to taste

Method:

  • Place all your ingredients into your food processor and whizz up.
  • Check for flavour and add more sweetener if needed.
  • Either store into ice cube trays for portion control or into a glass dish with a lid and freeze. or keep in your fridge and let it thicken up as a mousse.
  • To serve please pull out and defrost 30 minutes before serving
